Air Fried Balsamic Mushrooms
Serves: 2-3Prep time: 10 MinsCook time: 5 MinsINGREDIENTS
1 punnet Denny White Button Mushrooms
1 Tbsp olive oil
2 Tbsp soy sauce
2 Tbsp Safari Cape Balsamic Vinegar
1 tsp minced garlic
1 tsp dried herbs
4 Tbsp parmesan cheese, finely grated
Black pepper, to taste
Couscous, for serving
Seasonal salad, for serving
METHOD
Slice the larger white buttons in half and keep smaller ones whole so they all cook at the same rate.
Place mushrooms in a large mixing bowl.
Drizzle with the olive oil, soy sauce and balsamic.
Scatter over the garlic, dried herbs and parmesan.
Season with freshly ground black pepper.
Toss to coat the mushrooms well in the mixture.
Preheat air fryer to 190˚C.
Place mushrooms in the air fryer basket and air fry for 4-5 minutes, depending on their size.
When golden brown and tender remove from the air fryer.
The mushroom cooking juices that accumulate in the bottom of the air fryer make an excellent dressing / sauce.
Plate mushrooms on a bed of couscous and serve with a side salad.
Drizzle the mushrooms and couscous with the super flavourful balsamic mushroom cooking liquid and enjoy!
