Braai Mushroom Tostadas
Serves: 2-3Prep time: 15 MinsCook time: 15 MinsINGREDIENTS
Salsa:
1 large red onion, quartered and sliced
1 large jalapeño, sliced
1 handful fresh coriander, roughly chopped
1 large avocado, diced
2 Tbsp fresh lime juice
2 Tbsp Safari White Wine Vinegar
1 tsp salt
2 tsp sugar
1 punnet Denny Braai Mushrooms
2 Tbsp Cape Herb & Spice Taco Spice
6 fresh white corn tortillas (Or flour or yellow corn)
125ml sour cream
Lime wedges, for serving
Salt and pepper, to taste
Olive oil, for cooking
METHOD
For the salsa:
Combine all the ingredients in a small bowl and mix well.
Set aside until serving.
Preheat braai to medium high heat.
Brush the Denny Braai Mushrooms with olive oil and season well with Cape Herb & Spice Taco Spice.
Braai until tender and set aside to rest and then slice.
Brush the tortillas on both sides with a little olive oil.
Braai until lightly charred and crisp.
Spread a little sour cream onto the base of each tortilla.
Top with a few spoonfuls of salsa and then sliced spiced mushrooms.
