Combine all dressing ingredients in a small bowl and whisk together to emulsify. Set aside.
Slice the Denny Brown Mushrooms and prepare the rest of the ingredients.
To assemble the salad jars:
- Begin by dividing the salad dressing between the two jars.
- Layer the ingredients into each jar. Chickpeas, tomatoes, cabbage, Denny Brown Mushrooms, baby spinach, quinoa, peas, peppers and feta.
- Place the lid on the jars and seal.
- At this point you can keep your salad jars in the fridge for up to 5 days. (If you would like to add things like avocado that do not keep well, do so on the day of consumption)
To serve for a quick and easy lunch:
Shake up the jars until the mushrooms and all the ingredients are well marinated in the dressing and enjoy!
Tip out into a bowl, mix everything well in the dressing and enjoy!
