Exotic Mushroom Crêpes
Serves: 4Prep time: 15 MinutesCook time: 20 MinutesINGREDIENTS
Crêpe batter:
2 extra large eggs
300ml milk
125g flour
2 Tbsp melted butter
Pinch of sea salt
2 Tbsp chives, finely chopped
1 punnet Denny Exotic Mushroom Mix, sliced
2 Tbsp sherry vinegar
40g wild rocket & micro herb mix
40g parmesan shavings
Truffle oil, optional
Olive oil, for cooking
Salt and pepper, to taste
METHOD
For the batter:
Combine eggs, milk, flour, melted butter and salt.
Use a blender and blend until completely smooth.
Stir through the chives.
Heat a 24cm non-stick pan over medium high heat.
Lightly grease with a paper towel dipped in olive oil.
Pour in about 4 tablespoons of batter, swirling and tilting the pan to spread batter in a thin, even layer.
Cook for about 30 seconds.
Using a thin spatula, lift one edge of the crêpe.
Grab that edge with your fingers and flip the crêpe.
Cook on the second side for 20 seconds, then transfer to a plate.
Fold up and keep warm in a low oven while you complete the rest.
Once the crêpes are finished, heat a large frying pan on high heat.
Add a drizzle of olive oil.
Cook the Denny Exotic Mushrooms until golden brown on the edges and tender.
Season lightly with salt and pepper.
Finish with the vinegar and toss to coat.
Plate 2 crêpes per person and top with a mound of exotic mushrooms.
Scatter over the rocket, micro herbs and parmesan shavings.
Add a drizzle of truffle oil for a little luxury flourish if desired.
Serve warm and enjoy!
