Exotic Mushroom Wonton SoupServes: 4Prep time: 10Cook time: 20
2 litres / 8 cups chicken or vegetable stock
1 clove garlic, finely grated
1 Tbsp fresh ginger, finely grated
1 small fresh chilli, finely diced
4 spring onions, thinly sliced
400g Denny Exotic Mushroom Mix, sliced
4 tsp soy sauce
2 Tbsp rice vinegar
±20 fresh or frozen wontons/dumplings of your choice
4 baby bok choi, halved and leaves separated
Bring chicken or vegetable stock to a simmer in a large pot.
Add the garlic, ginger, chilli and most of the spring onions, cover and cook for 5 minutes.
Add the Denny Exotic Mushrooms, soy sauce and rice vinegar.
Cook for 2 minutes until the mushrooms are almost tender.
Add the wontons and cook for a minute and then finally add the bok choi and cook until wilted.
Divide soup in four bowls.
Garnish with remaining spring onions and serve!
