Marinated Mushroom Salad
Serves: 4Prep time: 0 MinsCook time: 20 minutes + marinating timeINGREDIENTS
1 punnet Denny portabellini mushrooms, sliced
1 clove garlic, finely sliced
¼ red onion, sliced
5 sprigs fresh thyme
1 Tbsp fresh chives, chopped
1 Tbsp lemon zest
4 Tbsp lemon juice
100ml extra virgin olive oil
180g mixed salad greens
1 small Mediterranean cucumber, sliced
175 cherry tomatoes, halved
100g feta cheese, crumbled
2 x 25g packets Denny Ready-To-Eat Mushrooms Crisps
Olive oil, for cooking
Salt and pepper, to taste
METHOD
Place mushrooms in a medium sized bowl.
Add the garlic, onion, herbs, lemon zest, lemon juice and olive oil.
Season generously with salt and pepper.
Toss the mushrooms so they are evenly coated with the marinade ingredients.
Leave to marinate at room temperature for 30 minutes if eating right away, tossing often.
For maximum flavour - leave mushrooms to marinate in the fridge overnight as they will absorb more flavour with time.
Combine salad greens, cucumber and tomatoes in a large serving bowl.
Spoon over the marinated mushrooms along with some of their aromatics and marinade, leaving only the thyme sprigs behind.
Sprinkle over the crumbled feta.
Finish the salad with plenty of little Denny Mushroom Crisps.
Serve straight away and enjoy!
