350g macaroni or any other short pasta of choice
1 Tbsp white wine vinegar or any vinegar of choice
250g Denny Portabellini Mushrooms, sliced
1 x 400g Denny Creamy Mushroom & Black Garlic Pasta Sauce
250g cream cheese
2 Tbsp fresh parsley, chopped
150g cheddar cheese, grated
3 Tbsp panko breadcrumbs
Olive oil, for cooking
Salt and pepper, to taste
Basil leaves, for garnish
Preheat oven on grill setting.
Bring a large pot of salted water to a boil.
Cook the macaroni until al dente.
Reserve one cup of pasta cooking water then drain.
Sprinkle the macaroni with the vinegar and toss to combine.
This seasons the pasta and keeps it from sticking together.
While the pasta is cooking, place a large oven safe buffet casserole style pot on the stovetop.
Heat a drizzle of olive oil and add the Denny Portabellini Mushrooms.
Cook until golden brown.
Pour in the Denny Creamy Mushroom & Black Garlic Pasta Sauce.
Add the cream cheese and stir until smooth.
Add the cooked pasta and parsley.
Mix to combine well.
Add a couple splashes of the reserved pasta water while mixing to maintain a smooth creamy silky sauce.
Taste to adjust seasoning.
Sprinkle over the grated cheddar cheese and then the breadcrumbs.
Grill for 5 - 10 minutes until golden brown.
Scoop generous mounds of mushroom mac & cheese onto plates.
Sprinkle with some fresh basil, a crack of black pepper and enjoy!
