Mushroom Taco Cups
Serves: Makes 12 CupsPrep time: 10 MinutesCook time: 25 MinutesINGREDIENTS
1 punnet Denny Braai Mushrooms, halved and sliced
500g lean beef mince
2 tsp onion powder
1 Tbsp taco seasoning / Mexican spice mix
1 x 400g tin diced tomatoes
1 small bunch fresh coriander, roughly chopped
12 wonton wrappers
4 Tbsp sour cream
Fresh salsa:
2 medium tomatoes, diced
½ red onion, finely diced
1 small bunch fresh coriander, roughly chopped
Juice of ½ lime
Lime wedges, for serving
Olive oil, for cooking
Salt and pepper, to taste
METHOD
Combine all the salsa ingredients together.
Season with salt and pepper and set aside until serving.
Heat a drizzle of olive oil in a large frying pan.
Cook the mushrooms until golden brown and they have released all their liquid.
Add the mince, onion powder and taco seasoning.
Cook until the mince is nicely browned.
Add the tinned tomatoes and coriander.
Simmer until thickened - you do not want a very wet saucy filling.
Taste to adjust seasoning.
Remove from the heat.
Preheat oven to 200˚C.
