Breakfast Egg Fried Rice
Serves: 2-3Prep time: 5minsCook time: 20 minsINGREDIENTS
5-6 slices of bacon, sliced
1 Tbsp sesame oil
1 Tbsp sunflower oil
3 spring onions, thinly sliced
3 cup previous day cooked rice, at room temperature (best case scenario this rice was cooked in Denny Mushroom Stock)
1/4 cup low-sodium soy sauce
1 Tbsp sesame seeds, toasted
1/4 tsp chilli flakes or freshly sliced red chilli
1 Tbsp butter
2-3 eggs
1 sachet Denny Mushroom Stock Powder
METHOD
A large pan or wok cook the bacon in the sesame oil over medium to high heat until golden, add the sunflower oil, spring onion and rice and cook over a high heat breaking any clumps of rice apart.
Add the soy sauce and stir through.
Serve top with a fried egg, sesame seeds, chilli flakes and a final flourish of Denny Mushroom Stock Powder to add seasoning and a rich umami flavour.
