Denny Risotto
Serves: 2 - 4 Prep time: 10 minsCook time: 30-40 minsINGREDIENTS
3 Tbsp olive oil
½ onion, finely ed
2 Tbsp butter
2 cloves garlic, grated
2 cups arborio rice
2 x 180ml Denny Chicken Stock (can substitute with Denny Mushroom Stock)
360ml water
125ml dry white wine (can substitute with non-alcoholic)
1 cup Parmesan, grated
Salt and pepper to taste
METHOD
In a pot, heat together two sachets of Denny Chicken Stock (2 x 180ml ) with an equal amount of water to keep it hot throughout the process.
Heat olive oil in a Dutch oven/large pot. Add butter, chopped onion and garlic and cook for 5 minutes, stirring often until aromatics are translucent. Season with salt and pepper.
Add the arborio rice , stirring quickly to make sure the grains are well-coated. Cook the grains for about two minutes until they smell slightly toasty.
Add the optional (non-alcoholic) dry white wine to the rice until absorbed.
With a ladle, add about 1 cup of hot stock at a time. Stirring constantly. Cook until the rice has mostly absorbed the stock before adding another ladle full and repeat the process until the risotto is al dente and creamy.
