1 cup cauliflower, cut into florets
1 cup sweet potato, diced into small cubes
½ large onion, diced
1 tin chickpeas, rinsed & drained
1 x 400g Denny Curried Butternut Plant Based Cook-In Sauce
1 x large South African style “French loaf”
(The type found at a Spar / Pick n Pay / Checkers bakery counter)
Fresh coriander, to serve
Olive oil, for cooking
Salt and pepper, to taste
Preheat oven to 200˚C with the fan on.
Place cauliflower and sweet potato in a roasting dish.
Drizzle with olive oil and season with salt and pepper.
Toss to coat well.
Roast in the oven for 20 minutes until tender.
Heat a drizzle of olive oil in a large frying pan.
Add the onion and cook until tender.
Pour in the Denny Curried Butternut Plant Based Cook-In Sauce and bring to a simmer.
Add the roasted cauliflower and sweet potato.
Add the drained chickpeas.
Simmer together for 5 minutes and taste to adjust seasoning.
Slice bread loaf into 8.
Press down the centre of each piece to create a little well.
Divide the curry between the 8 mini bread loaves.
Garnish each one with fresh coriander and serve!
