Mozambique Per-Peri Chicken & Prawn Platter

INGREDIENTS

• 1 sachet DENNY Mozambique Peri-Peri Flavoured Dry Cook-In Sauce

• 300ml water

• 100ml coconut milk or cream

• 4 chicken pieces or 1/2 a chicken (thighs or drumsticks, skin-on for flavour)

• 400g large prawns, deveined, shell on

• 2 Tbsp olive oil

• Juice of 1 lemon

• Salt and pepper, to taste

• Fresh parsley, chopped, for garnish

To serve:

• Crispy roast potatoes

• Fluffy parsley rice

• Grilled garlic bread and lemon wedges

METHOD

In a bowl, mix the DENNY Mozambique Peri-Peri Dry Cook-In Sauce with 300ml water and 100ml coconut milk or cream. Stir until smooth and set aside.

Preheat the airfryer to 180C. Season the chicken pieces or 1/2 chicken with salt and pepper and roast for 10 minutes. Add 1/2 the sauce to the chicken and roast for another 20 minutes, basting the chicken every 5 minutes

Add the prawns directly into the airfryer basket with the chicken (pushing the chicken to the one side) and sauce, 10 minutes before the cooking time is over.Add the rest of the sauce with the prawns.

Squeeze over fresh lemon juice and garnish with chopped parsley.

Dish up the chicken and prawns with roast potatoes, parsley rice, and grilled garlic bread on the side for the ultimate Mozambique-inspired feast.

Cook’s tip:

Swap coconut milk for cream if you prefer a richer, milder sauce. Perfect with an ice-cold cider or beer.
