CRISPY PASTA NESTS

3-4 cups leftover cooked spaghetti
1/2 sachet (400g) Denny Tomato & Basil Pasta Sauce
½ cup grated Parmesan cheese
Salt & black pepper, to taste
3-4 tbsp olive oil, for frying
METHOD
In a large mixing bowl, toss the leftover spaghetti with the Denny Tomato & Basil Pasta Sauce.
Add the Parmesan cheese.
Season with a little salt and pepper. Mix well until evenly coated.
Use a large spoon and twirl the spaghetti with a fork into little "nests" – about 5–6cm wide.
Place each nest gently on a tray or plate while you make the rest.
Heat a thin layer of olive oil in a large non-stick pan over medium heat.
Fry the nests in batches for 2–3 minutes per side, or until crisp and golden. Adding more oil when needed.
Use a spatula to flip them gently over without overcrowding the pan.
Enjoy warm with extra Parmesan, fresh basil or a side of garlic mayo or pesto for dipping.
