Mushroom Mexi Bowls
Serves: 4, as a starterPrep time: 10 MinsCook time: 20 MinsINGREDIENTS
Salsa:
½ red onion, finely diced
2 ripe tomatoes, diced
¼ cup coriander leaves, roughly chopped
Juice of ½ lime
1 punnet Denny White Button Mushrooms, sliced
½ red onion, finely diced
1 Tbsp Mexican / taco seasoning
1 x 400g tin diced tomato
1 x 400g tin black beans, rinsed & drained
250g nacho chips, for serving
200g guacamole, for serving
Olive oil, for cooking
Salt and pepper, to taste
METHOD
For the salsa:
Combine all ingredients in a small bowl.
Season with salt and pepper.
Toss to mix well.
For the mushrooms:
Heat a drizzle of olive oil in a frying pan.
Add the mushrooms and cook until golden brown.
Add the onion and Mexican seasoning and cook until tender.
Pour in the tinned tomatoes and beans.
Bring to a simmer and cook down until thickened.
Taste to adjust seasoning.
Spoon the mushroom and bean mixture into bowls along with the salsa and a generous handful of nacho chips. Arranging each component in a separate little pile.
Finish the bowls with a dollop of guacamole.
Serve, scooping everything together using the nacho chips as a spoon and enjoy!
