BOLOGNAISE SHAKSHUKA
Serves: 4Prep time: 10 minsCook time: 20 minsINGREDIENTS
• 1 tbsp olive oil
• 1 small onion, diced
• 1 red pepper and yellow, diced
• 2 cloves garlic, minced
• 500g beef mince (optional)
• 1 tsp smoked paprika
• 1 tsp ground cumin
• ½ tsp chilli flakes (optional)
• 1 tbsp parsley, chopped
• 1 x 415g sachet Denny Bolognaise Pasta Sauce
• 4-6 large eggs
• Salt and black pepper, to taste
• 100g (about 1 disc) feta, crumbled
• Fresh parsley, for garnish
• Crusty bread or pita, to serve
METHOD
• Heat olive oil in a large frying pan over medium heat.
• Add the chopped onion and cook until soft and translucent, about 5 minutes.
• Stir in red pepper and garlic, and cook for 3–4 minutes, before removing from the pan and set aside.
• Add the mince and cook until browned - breaking the clumps apart as it cooks. It should take about 10 minutes. Add the onions and peppers back to the pan.
• Add smoked paprika, cumin, and chilli flakes. Stir to combine and cook for 1 minute until fragrant.
• Pour in the Denny Bolognaise Pasta Sauce. Simmer for 5–7 minutes, allowing the sauce to thicken slightly.
• Use the back of a spoon to make 4-6 small wells in the sauce. Crack an egg into each well.
• Cover the pan with a lid and cook for 6–8 minutes, or until the eggs are just set but yolks are still runny.
• Season with salt and pepper to taste.
• Garnish with fresh parsley and feta and serve hot with crusty bread or pita.
