Easy Bobotie
Serves: 6Prep time: 15 MinsCook time: 30 MinsINGREDIENTS
2 Tbsp olive oil
1 onion, finely diced
500g beef mince
2 slices white bread, crusts removed
125ml milk
¼ cup raisins
1 x 400g Denny Bobotie Curry Sauce
Custard:
2 XL free-range eggs
160ml milk
⅛ tsp ground turmeric
Generous pinch of salt
± 5 bay leaves
Yellow rice:
1 ½ cups basmati rice
2 cups water
½ tsp ground turmeric
1 tsp salt
¼ cup raisins
METHOD
Preheat oven to 200˚C.
Heat olive oil in a frying pan.
Cook the onion until tender.
Add the mince and mix through the onions.
Soak the bread in the milk.
Add the soaked bread and raisins to the mince.
Pour in the Denny Bobotie Curry Sauce and mix well.
Remove from the heat and transfer mixture to a 22cm squar baking dish.
Smooth the top.
Whisk together the eggs, milk, turmeric and salt.
Gently pour the custard over the curried mince filling.
Top with the bay leaves and transfer to the oven.
Bake for 20 minutes until the custard is golden and set.
While the bobotie is baking, make the rice.
Rinse the rice under running water until the water runs clear.
Place all ingredients in a medium sized pot with the lid on.
Place over high heat and bring to a boil.
Reduce heat to a simmer and cook for 10 - 12 minutes until the water has been absorbed and the rice is cooked through.
Fluff with a fork before serving.
Scoop generous mounds of bobotie and serve on the yellow rice and enjoy!
